We need a stand out symbol and abbreviation for our brand Vinegar Works

This is what Vinegar House was looking for in their logo design

We are a business based in Worcestershire UK . Our name is taken from the fact that Worcester was the largest producer of Vinegar in the 18th and 19th century including being the home of Worcestershire Sauce . We already have a logo which I will attached as a file but there are three jobs to be done . 1. We need to have a cut down for it - So Vinegar Works becomes VW so we can use that in places where there is no room for the full brand and we want to make it stand on its own too 2. We need a symbol of Vinegar Works which is the company icon without the name, or abbreviation of VW but we also want to use it so it can sit along side both if needed . 3. Also need a colour palate - at the moment we only have black and white . The building is very red brick so we have alot of red / copper tones and olive green Vinegar is the holding company so we have Vinegar House , Vinegar Works etc so the symbol needs to be able to work across multiple businesses ..
