Logo Design Brief

I need a logo for a new restaurant in NY called "The Standard Food & Drink". I imagine The Standard on one line and Food & Drink below it, but I'm open to your designs. The restaurant will be a comfortable local gastropub, serving tasty eats (CIA-trained Chef cooking high-brow comfort food with a Southern accent - beer can chicken, a house-ground burger on a homemade foccacia bun, stuffed chicken wings, deviled eggs, low country mussels, etc; twists on classic cocktails; local beers and great wines. Think exposed brick, galvanized metal, mason jars, exposed filament lighting, etc. in terms of decor. Fonts used on the menu are Castellar, Pacifico, Baskerville Old Face. In terms of colors, I imagine white, dark grey, a chalkboard, wood, some white washed accent pieces, and orange as the accent color for 'pop' throughout the restaurant. If you happen to watch Restaurant Start-up on CNBC, we liked the look and feel of the final logo the designer came up with for Mills + Co (it is not the company's logo now).
