Logo Design Brief

I would like to take an existing Coat of Arms design and make it look more like a hand drawn illustration. I would like it to a grayscale color as well as a black and white initially but also done in such a way that it could be one color. This design is to be used as a logo but that can also be printed onto clothing, hats, etc....Included below is the current coat of arms (the one with the quail, trout, and hunting dog) along with examples of how I would like it to look.
