Logo Design Brief

We need a logo design for a startup Artisan cheesemaker named Copley Vintage Cheesemakers LLC.
We are making farmhouse-style artisan cheeses on a small scale, using recipes and techniques from English and French country farms. Cheeses are high-end, gourmet offerings at premium price points.
Logo design should project refined, artistic, vintage, authentic, and perhaps suggest red-white-blue colors of each of the 3 nations (US, UK, France).
I considered using a wheel of cheese with a wedge cut-out to fit inside the "C" of Copley, with the wedge turned to fit in the "V" of Vintage - but it may be too cutesy.
Logo needs good visibility and recognition in small format, as on cheese portion labels, as well as in website and stationery.

Sophisticated "foodies", especially millennial and urban sophisticates; natural food and artisan appreciators.

Requirements

Must have

• A memorable image so it will stand out in a cheese counter, with enough color to accomplish this without being garish or unsophisticated.

Nice to have

• I envision the text "Copley Vintage" placed over a wide wood chopping block, flanked by a wedge of ivory to cream colored cheddar cheese on the left, and a wedge of Stilton blue on the right; then the text "Cheesemakers" under the board.
• See images below for general look - others can be provided if required.
• Try isolating the cheddar and rotating it.

Should not have

• Glaring, garish, distorted font or font styling.
• Unmemorable monochrome look.
• Industrial or financial looking (funeral home) type of border or feel.
